Board of Health Regulations

Board of Health regulations require that all chili be prepared in a restaurant or other certified commercial kitchen. We suggest you team up with a restaurant or caterer and offer a joint entry, or ask a neighborhood restaurant, caterer, or other commercial enterprise to let you prepare your chili in its kitchen. A certification document, which we will supply to you from the city, has to be signed and returned to the Board of Health prior to the cookoff date.

If you have questions or concerns about this, please feel free contact Pat O’Neill at 617-265-5397 or pattiashmont@gmail.com.

Deadline for Entering as Chili Cook

All entrants must be registered in advance. Please email or call Pat O’Neill by  March 14th if you plan to participate.

How Much Chili to Prepare

Each entrant should prepare between 6 and 8 quarts of chili. We will supply steam chafing set-ups the day of the cook-off to keep the chili hot and each entrant will be supplied with aluminum pans to fit the steam tables. We urge you to bring your chili in these pans already heated on cook-off day so that the food can be brought up to regulation temperature quickly.
